Broken Noodles with Tomato Sauce and Ricotta

Using my home canned tomatoes, I whipped up this delicious dinner the other night, It's easy and you'll have dinner on the table in about 45 minutes!! Get the recipe here: Broken Noodles with Tomato Sauce and Ricotta.

Start off by making a Quick Marinara Sauce:





Here I've assembled the ingredients for the marinara sauce: 2 Tablespoons Olive oil, 2 quarts of my canned tomatoes plus some of my homemade tomato paste (to thicken the sauce a bit, this is optional) or two 28 oz cans of whole tomatoes with juice, crushed, 2 minced garlic cloves & a pinch of red pepper flakes.



Heat the olive oil, garlic and red pepper in a large pot until just fragrant. 1 to 2 minutes.



Add the canned tomatoes and paste (or the 2 cans of crushed tomatoes & juice), a little salt & pepper. Cook at a rapid simmer, stirring occasionally, until thickened, about 15 minutes.



For the remainder of this dish, you'll need some broken pappardelle pasta (I couldn't find pappardelle at the last minute so I subsituted straight lasagna noodles, broken up), fresh torn basil leaves (yes, I grow this, year round, as well) and fresh ricotta cheese.



To your pot of marinara sauce, add 2 cups of water and bring it to a boil. Reduce the heat to a simmer and add your broken pasta. Simmer, stirring frequently, until tender. Season with a little coarse salt. Serve with a dollop of ricotta, sprinkle with the fresh torn basil leaves and some freshly ground black pepper.
