Garlic & Cheese Chicken Roll-Ups

Looking for new and different ways to prepare something for dinner, is something that I'm always working on. This recipe is an example of just the type of dish I look for. It's unique, yet simple, and can be made for any night of the week! The recipe comes from my good friend, Michelle, whom I met many, many years ago and share the love of our favorite band, Depeche Mode.

The ingredients are common and you probably have them all in your refrigerator and pantry right now. It also uses a new grocery store item called, "Philadelphia Cooking Creme", which I have been wanting to try, and I have to say, I'm quite impressed with the flavor and versatility of this new cooking ingredient. So why not try this tonight or impress that special dinner date!

6 boneless, skinless chicken breasts
1-1/2 cups Italian Seasoned Bread Crumbs
3/4 cup of freshly grated Parmesan Cheese
8 Tbls (1 stick) Unsalted Butter, melted
1 container (10 oz) Philadelphia Cooking Creme, Savory Garlic
1 bottle (16 oz) Kraft Zesty Italian Dressing
1/2 cup each, shredded Cheddar & Mozzarella Cheeses, mixed together

The first step is to place each chicken breast, one at a time, in between two pieces of plastic wrap and pound, with the flat side of a meat mallet, until each piece is evenly thin. Then you want to marinate the chicken in the zesty Italian dressing. Marinate for at least 4 hours or overnight. If you have a FoodSaver Vacuum Sealing System with the Marinator Accessory, like I have here, you can marinate the chicken in 30 minutes!

After the meat has been marinated, Preheat your oven to 350°. In one shallow dish, such as a pie tin, place the melted butter. In another shallow dish, the bread crumbs and Parmesan Cheese, mixed together. Place a piece of the chicken on a piece of parchment paper, and spread about 2 Tbls. of the cooking creme on the chicken, then about 1 Tbls. of the shredded cheese mixture. Starting at one end, roll up the chicken breast, tucking in the sides, to form a small "loaf" shape. Secure with toothpicks. Roll the chicken in the melted butter, then coat in the bread crumbs.


Place the chicken, in a 13" x 9" baking dish and drizzle with leftover melted butter, then sprinkle with any remaining bread crumbs. Bake for about 25 to 30 minutes, depending on how big or thick the chicken is, until done. A meat thermometer inserted through the center should read 165°. Sprinkle a small amount of the shredded cheese mixture on top of each chicken, then return to the oven for 5 more minutes or until the cheese is melted.



When the chicken is done, remove from the oven and allow to rest for about 5 to 10 minutes. Serve this with some creamy mashed potatoes or any vegetable of your choice, and a beautiful green salad. Enjoy!
